FINALLY!! Quick, easy, and simple pancakes! I am one of those people that has a serious problem with anything that turns something unhealthy, into being macro friendly. I meal prep my meals for the work week, however, this week I came up shy on my protein source for meal 2 this week.
With it being Friday I did not want to run to the grocery and grab some meat for just today, so I needed to come up with a meal that would still hit my macros for the day. As I was working I kept trying to figure out what I was going to eat, but nothing was sounding good. Then I remembered a friend making pancakes with bananas, GENIUS!
I keep bananas on hand now, so I started looking for recipes. Many failed attempts at finding something that would work for me I came across this article from bodybuilding.com that gave me some solid ideas! Most of these, if I were eating them for breakfast, would hit the macros I need, but for what I needed I took one of the simple recipes they had (#2 Two-ingredient pancakes). I needed a little extra boost of protein so I added half a scoop of protein to it, and HOLY COW these blew my mind with how good they were. I topped them with honey, but honestly, they don’t even need a topping in my opinion. I’ll post the recipe below as well.
- 1 egg
- 2 Egg Whites (~1/3 cup)
- 1 medium banana
- 1/2 scoop protein (I used Pro Jym Tahitian Vanilla Bean)
Mash the banana and add the rest of your ingredients, mix until smooth. Lightly spray a skillet and let it heat up over medium heat. Pour the mixture. Gently flip your pancakes after about 25 seconds, then enjoy! I made smaller pancakes, but this mixture made about 6 for me.
