Just a Simple Salad

I don’t know if you’re like me or not, but salads get so boring! They fill me up, but then I find myself thirty minutes to an hour later looking for something else to eat because I got hit with a craving that my food didn’t quite satisfy. I have been playing with my macro count, as well as playing with when to eat certain types of food and came across one of the most satisfying and filling salads! I have an awful sweet tooth, but for some reason using balsamic vinegar (which is used as a dressing for this salad) hits that craving. Since carbs for dinner haven’t done my body any good this salad does not incorporate any, other than what comes from the veggies, but I bet it would amazing with some quinoa. Give it a shot a let me know what you think. Enjoy!

springmix

For the salad

2 cups of leafy greens – I like to use Marketsides Spring Mix

4oz grilled chicken breast

2oz avocado

1/3cup chopped onion

1/3 cup diced tomato

For the dressing

1t of Extra Virgin Olive Oil

1T balsamic vinegar

Place everything in a bowl and mix it well. I usually place mine in a tupperware, or a mixing bowl that has a lid in order to shake the salad to make sure everything is coated and mixed well. I have become an addict to this salad, and since it fits my macro count perfectly, I have been eating it for dinner (almost every night).
